Green Fajitas with Spicy Potatoes

No idea where this recipe came from, but I remember making it with Jaime at her parents’ place and it was good!

1.5 lbs chicken breasts

Marinade:

2 tbsp olive oil

3 tbsp lime juice

2 cloves garlic

1 cup packed cliantro leaves

1/2 jalapeno, seeded

salt & pepper

 

1 tbsp olive oil

1 large onion

1 green bell pepper

Potatoes:

2 tbsp olive oil

3 potatoes, cut into 1/2-inch cubes

salt & pepper

cayenne pepper, to taste

10 flour tortillas

 

Pound chicken breasts to 1/2 inch thick.  Blend oil, lime juice, garlic, cilantro, jalapeno, salt, and pepper until smooth.  Pour over chicken.  Cover and marinate 30 minutes

Cook onions and peppers.

In a 9×13 glass baking dish, toss potatoes with oil and seasonings.  Bake at 375 until crispy (about 30 minutes).  Stir occasionally to prevent sticking.

Heat tortillas

Serve with grated jack cheese, salsa (Mrs. Renfro’s Roasted Salsa was good), and sour cream.
