Fried Noodles/Pad Thai
Hand-jotted recipe from a coworker, circa 2004?
white rice noodles (any width
Pad Thai seasoning (found in the asian section of any grocery store)
salt and pepper
lime slices
coarsely chopped peanuts
cilantro
green onions, chopped
protein of your choice
vegetable oil, about 4 tbsp
In a wok or large skillet, pour a little vegetable oil (2 tb?) and heat it up. Cook the meat first, stir fry and cook thoroughly.
In a pot on the side, boil water. Once the water is boiling, take it off the stove. Throw in the rice noodles and let them soak until the are al dente (not too soft). Drain the noodles. ***Do not let the noodles sit long after the water is drained.
Throw the noodles into the wok/skillet and stir for 4-7 minutes until firm but tender. Add about 2 tbsp of vegetable oil. Stir for a couple minutes and add the Pad Thai sauce. Salt and pepper to taste.
Serve garnished with green onions, cilantro, lime wedges, and peanuts.
